Lunch today was one of my favorite takeout options that I haven’t had lately…the Ruby Tuesday salad bar.

This salad was huge! Full of fresh veggies plus edamame and egg for protein, delicious pumpernickel croutons, and balsamic dressing. Perfect meal at my desk.
This afternoon I took a hard boot camp class…my friend Chad taught class today. That took the place of P90X for me today. My sweet husband, on the other hand, was dripping in sweat after his P90X Kenpo X workout (kickboxing)…can’t wait to try that one next time.
When I got home from work around 7:30, I was tired and just wanted to relax….but we needed something for dinner. You know, I love to cook when I have time and I have a plan, but tonight I felt rushed and unplanned. I really had no desire to cook anything. Then, a great thought entered my brain….

A glass of Shiraz made cooking much more fun.
After much flip-flopping…we discussed omeletes, BLTs, egg sandwiches…I decided to throw together a couple of pizzas on whole wheat naan. One was veggies with mozzarella and the other was pesto sauce with tomato, olives, and feta…simple and delicious.

Amen Angie. Nick and I went to Kroger for some more Christmas beer. I enjoyed one while cooking dinner. It was perfect.

Yes, I love the RT salad bar. Ok, this may be wierd but the other thing I do there is order a plain baked potato off the menu with the salad bar since the bar has cottage cheese and so I pile it on the potato with broccoli since that is one of my faves.
I could imagine getting home that late would drain any cooking inspiration! I love cooking with wine and sometimes I even add it to the recipe lol
