Black Bean, Corn, and Feta Dip

by Angie on January 5, 2013

So, I think this is quite possibly my favorite dip ever. If you invite me to a party, chances are that I will bring this dip! It’s quick, easy, healthy, and delicious…what is not to love?

1 can black beans, drained and rinsed
1 can shoe peg corn, drained
1 – 6 oz. package crumbled feta cheese
4 scallions, chopped

1/3 cup balsamic vinegar (or white balsamic vinegar)
1/3 cup olive oil (or a little less, depending on your preference)
2-3 Tbsp. sugar (more or less, depending on your taste)

Chop scallions. Combine scallions with black beans, corn, and crumbled feta. Whisk together vinegar, olive oil, and sugar. Pour over other ingredients and toss. Chill. Serve with tortilla chips.

The credit for this recipe goes to my RD friend, Brenda. This recipe is so easy and really really good! Enjoy!

I make a salsa with some of the same ingredients, but it doesn’t have feta. This sounds delicious!

I think I would agree, it sounds fantastic! Anything with feta and corn I WILL eat!
