Bruschetta Primavera

2 large tomatoes, peeled, seeded and diced

¼ cup chopped fresh parsley

2 tsp chopped fresh basil

2 large garlic cloves, minced + 4-6 garlic cloves, halved

½ tsp salt

½ tsp fresh ground pepper

12 slices crusty bread, cut about ½ inch thick

1/3 cup olive oil

 

In a small bowl, stir together the tomatoes, parsley, basil, minced garlic, salt, and pepper. Set aside.

 Arrange the bread slices on your grill rack. Grill, turning two or three times, until the bread is golden brown on both sides, and 3 minutes total.

 Remove from the grill and immediately rub one side of each slice with a cut garlic clove, pressing the garlic into the surface of the bread. Brush or drizzle the olive oil over the bread slices. Top each slice with about 2 tablespoons of the tomato mixture and place on a platter. Serve as soon as possible.
