
1 Tbsp. olive oil
1 pound skinless, boneless chicken breast, diced into bite-size pieces
1 yellow onion, diced
1 Tbsp. ground cumin
1 Tbsp. garlic powder
1 Tbsp. dried oregano
1 tsp. crushed red pepper (or more or less to taste)
2 (4 oz.) cans chopped green chile peppers
1 (14-ounce) can low-sodium chicken broth
1 can seasoned black beans, drained
1 can great Northern beans, drained
1 can hot chili beans
1 Tbsp. chopped cilantro + extra for garnish
light sour cream
In a large pot over medium-high heat, saute the chicken and onion in the olive oil until the chicken is cooked through and the onion is translucent. Add the cumin, garlic powder, oregano, and red pepper flakes and cook for a minute or two to develop the flavor of the spices. Add the canned green chiles and heat through. Stir in all 3 cans of beans and the chicken broth. Add 1 Tbsp. chopped fresh cilantro and reduce heat. Simmer for 30 minutes or longer. Serve topped with a dollop of light sour cream and a bit more fresh cilantro.

I LOVE what you’ve done /c the chili dish and the new name really tells everybody what they are going to eat. I hate recipes that tell you nothing about the food or components of a dish. I agree with the salad as a side dish as well. I love salad and now we’ll get to feature your two delicious dressings. I will havat least two chocolate pound cakes to enjoy, lots of warm chocolate sauce and whatever fresh fruit is available on the day.
I am so sorry to hear of your loss of Lucy. I much prefer dogs to people and have had a Lucy or two in my life…with different names but the same claim on my heart. I still sometimes forget and get the urge to hold open the door for Dawg Thurmer and he’s been gone almost 25 years. There’s no words right now to comfort a hurt that sharp. Remember you are my hero and I’m so looking forward to next week and cooking with you.
