Awesome Weekend Getaway

We just got back from a great weekend away at one of my favorite places on earth….an amazing bed and breakfast, The Duckett House, in Hot Springs, NC.

Something about this small town is so peaceful and relaxing…almost like going back in time.

My sister and brother-in-law, Amy and Dave, joined us for the weekend to celebrate both Amy and Anthony’s birthdays. We had a great time- starting with whitewater rafting on the French Broad with Huck Finn Rafting…

And, later, soaking in the Natural Mineral Springs…It is very cool- they have individual, private, hot tubs- they’re real hot tubs, but between each guest, they are drained and refilled with the natural hot mineral springs – the water comes out of the springs at about 102 degrees – really hot and full of minerals that are known to be therapeutic in a variety of ways.

One of my favorite parts of visiting Hot Springs is always the Duckett House breakfast. The owner, Frank, cooked us an amazing meal using primarily local, organic ingredients…many from right on the property’s farm….veggie omelette, English muffin, homefries, garden tomatoes with basil + fresh cherries and amazing coffee.

After breakfast, we went on a great walk/hike to a place called Max Patch…

And, we found an awesome little casual place with fabulous food for lunch – I had fish tacos…so good.

What a great weekend away…if you ever need a relaxing weekend getaway near the mountains of North Carolina, definitely check out Hot Springs and the Duckett House. You will come home rested, rejuvenated, and refreshed…and ready to go back again. :)

Five-Spice Turkey and Lettuce Wraps

Here’s a great new recipe I found on Eating Well:

Five-Spice Turkey and Lettuce Wraps.

For me to love a recipe, it has to be:

  • easy to follow
  • relatively few ingredients
  • lots of flavor
  • full of fruits and/or veggies

I followed the Eating Well recipe almost to the letter, with just a couple of small modifications.

Ingredients

  • 1/2 cup water
  • 1/2 cup instant brown rice
  • 2 teaspoons sesame oil
  • 1 pound 99%-lean ground turkey
  • 1 tablespoon minced fresh ginger
  • 1 large red bell pepper, finely diced
  • 1 8-ounce can water chestnuts, rinsed and chopped
  • 1/2 cup reduced-sodium chicken broth
  • 2 tablespoons hoisin sauce
  • 1 teaspoon five-spice powder
  • 1/2 teaspoon salt
  • 2 heads Boston lettuce, leaves separated
  • 1/2 cup chopped fresh basil
  • 1 large carrot, shredded

Preparation

  1. Bring water to a boil in a small saucepan. Add rice; reduce heat to low, cover and cook for 5 minutes. Remove from the heat.
  2. Meanwhile, heat oil in a large nonstick pan over medium-high heat. Add turkey and ginger; cook, crumbling with a wooden spoon, until the turkey is cooked through, about 6 minutes. Stir in the cooked rice, bell pepper, water chestnuts, broth, hoisin sauce, five-spice powder and salt; cook until heated through, about 1 minute.
  3. To serve, spoon portions of the turkey mixture into lettuce leaves, top with herbs and carrot and roll into wraps.

This turned out really well…super-delicious and super-easy.

Perfect for a quick weeknight meal.

Simple Spinach + Steak Salad

I may be a dietitian.

But, I’m just like you.

Busy.  A little tired after a long day. Sometimes uninspired to cook.

And, did I mention “busy”??

But, with a little planning, there’s still time to throw together a simple, quick and healthy dinner.

Simple Spinach + Steak Salad:

  • baby spinach
  • garden tomato
  • cucumber
  • grilled steak
  • feta
  • Kalamata olives
  • dried cranberries, cherries, and golden raisins
  • Newman’s Own vinaigrette

So quick. And so good.

You’re worth it. Make time for a healthy dinner. :)

Spaghetti with Fire Roasted Tomato and Basil Sauce

This is a great simple, quick, and delicious pasta dish…definitely a winner!

4 ounces whole-wheat spaghetti

1 Tbsp. olive oil

2 skinless, boneless chicken breast halves

2-3 Tbsp. light Balsamic dressing

4 ounces fresh button mushrooms, quartered

1 (14.5 ounce) can organic fire-roasted diced tomatoes (such as Muir Glen)

2 ounces light cream cheese, cut into cubes

2 Tbsp. (or more to taste) choppped fresh basil

2 Tbsp. freshly shredded Parmesan cheese

1. Fill a large pot with lightly salted water and bring to a rolling boil. Once the water is boiling, stir in the spaghetti, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta is cooked through, but still firm to the bite, about 8-11 minutes. Drain pasta well.

2. Heat the olive oil in a skillet, and cook the chicken breast halves over medium heat until lightly browned, about 5 minutes per side. Pour the balsamic dressing over the chicken, add the mushrooms, and cook, covered, until the chicken is no longer pink inside. Remove the chicken breasts and cut into strips.

3. Stir the tomatoes, cream cheese, and basil into the skillet with the mushrooms over medium low heat until the mixture comes to a boil. Stir to melt the cream cheese into the sauce, add the chicken strips and the cooked spaghetti, and toss together. Sprinkle with Parmesan cheese and a bit of fresh basil to serve.

Pesto Crusted Salmon + Operation Beautiful

After making homemade pesto last weekend, I was dying to find a new way to use it. I found the perfect answer.

Pesto Crusted Salmon.

So Good.

Grilled wild Alaskan salmon.

I grilled it for 5-6 minutes on one side, flipped it over and spread a fairly thick layer of Simple Basil Pesto on top. Grill for 5-6 more minutes…perfection.

Served with sauteed spinach with olive oil and garlic + a mashed sweet potato with cinnamon and brown sugar.

Simple. Delish.

Simple Basil Pesto

We had the best time making pesto over the weekend. I had only made it one time before and that was years ago.

Anthony picked a ton of basil from our garden – the whole house smelled like basil – amazing.

We started with 2 cups of packed basil leaves + 1/3 cup pine nuts in the food processor.

Pulse a few times.  Add 4 cloves of garlic and pulse a few more times.

Slowly add about 1/2 cup of olive oil in a constant stream while the food processor is on. Scrape down the sides as needed. Add 1/2 cup freshly grated Parmesan cheese and pulse again until blended. Add a pinch of salt and freshly ground pepper to taste.

Makes one cup.

So far, we’ve used it to make a yummy pizza….maybe pasta is next. I think I’m becoming obsessed with pesto- I want to use it with every meal! Do you think it would be good on fish? I’m thinking of trying pesto on my grilled salmon tonight…I’ll let you know how it turns out.

Thoughts on Body Image

I just read a great post by Melissa Nibbles….The Day I Started Hating My Body. What a well-written and thought-provoking post.

This got me thinking about a post that I had written a few months ago about the same topic. I’m re-posting and I’d love to hear your thoughts.

Yesterday, I was sitting in my office and I couldn’t help but overhear a conversation going on in the office right next door. A lady and her teenage daughter were both having a fitness assessment with one of our personal trainers…weight, body composition, strength, flexibility, and aerobic capacity.

The mom made several comments loudly and repeatedly, “This is horrible”, “I am disgusting”, and “I’ve gained so much weight”. The daughter was trying to encourage her mom, but it wasn’t working.

Earlier the same day, I also had a nutrition consult with a lady, 45 years old, whose mother regularly tells her, “You’re fat; You need to lose weight.” She stated that she has heard these comments from her mom her entire life.

Both of these conversations made me think about the effect that parents (moms and dads) can have, specifically, on their daughters’ self esteem. I feel blessed, my parents have always been positive, encouraging, and reassuring. I never once remember them saying anything that made me question my appearance or weight. However, the impact of parents’ comments come up fairly regularly in my work in weight management. They impact young women, especially, more than we probably realize. And, those effects often last far beyond childhood and adolescence.

One of my biggest pet peeves is hearing a woman, often a fit and healthy woman, comment negatively about her body. Especially in front of her young daughter. How is the young daughter supposed to process that information? Unfortunately, she usually feels that if her mom, who is fit and healthy, isn’t good enough….how can she ever measure up?

Have you ever overheard a conversation like that?

Did your parents do or say anything that contributed to your body image and self-esteem, positively or negatively?

What can we do as a society to help end these negative conversations?

Work Snack Party

I love appetizers.

I’d prefer a plate of finger-foods and snacks instead a whole meal any day.

And, I happen to work with some great cooks….so work parties in our office are awesome.
