Anthony and I have had a much-needed, quiet night at home. Dinner was a 2-egg omelet with onion, tomato, spinach and cheddar, topped with salsa + homemade sweet potato home fries and whole-grain toast. Simple and perfectly delicious. Sweet dreams. Goodnight!
